Soundcards
For Linux users, most sound cards supported by ALSA should work. Check the ALSA Soundcard Matrix for your sound card. Be aware that it should be able to do full duplex. See also: Shared use of the sound card.
It is strongly recommended that you use a headset. This will improve the overall sound quality.
Handset
For Linux users, experimental support can be found here.
Cameras
USB webcams which have a working driver for the v4l or v4l2 kernel API should work. Firewire cameras, including Firewire DV cameras, should work too.

Headsets
Jack plug
Any headset using a TRS connector (also called a jack plug (UK) or phone plug (U.S.) should work), these will plug into the soundcard or your PC/laptop.
Simply using ordinary headphones will prevent audio feedback (whistling and echoing). Headsets with microphones (ie. two connectors) will further improve quality by placing the microphone closer to your mouth.
Bluetooth
Linux: Further information about bluetooth headsets can be found in the Gentoo wiki or in the Ubuntu documentation.
